Coleslaw
1 lb cabbage
1/2 cup mayonnaise
1/4 cup heavy cream
3 tbsp lemon or calamondin juice
2 tbsp brown sugar
1 tbsp white vinegar
1 large carrot, grated coarsely
1 onion, grated coarsely
salt
1. Core and shred the cabbage. Transfer to a large bowl. Add the onions and
carrots and mix well.
2. Add the rest of the ingredients and season with about a teaspoon of salt.
Cover and let sit in the fridge for two hours.
3. Stir and check for flavor. Adjust with salt if needed.
