Banane al Forno (Baked Bananas)

This dessert is one I've always wanted to try and tonight, I finally got the chance to do so. With very little time to whip out dinner in the middle of the week and with diet restrictions which included eggs and dairy, I had to come up with something quick and tasty. I then remembered this dish of Sophia Loren which is her go to recipe for a quick dessert. It was indeed quick and tasty but it felt kinda missing a partner so I went and bought a non-dairy ice cream. My ice cream of choice is the "Purely Decadent" Mocha Almond Crunch which is made with coconut milk. A totally delicious way to end a vegan meal. 

Baked Bananas - Adapted*

6 ripe bananas
juice of one orange
6 tbsp brown sugar
4 tbsp unsalted butter
2 tbsp rum
1 tsp vanilla

1. Preheat oven to 350°F. 
    Grease a baking pan 
    large enough to hold 
    the bananas in one 
    layer. 

2. Peel the bananas and 
    cut in half crosswise 
    and then lengthwise across each half. Lay the bananas flat in the baking 
    pan and pour over the orange juice and sprinkle with the brown sugar. 

3. Dot with the remaining butter and bake for about 10 minutes. Drain the 
    sauce into a small pot and cook over high heat until thick. 

4. Pour the syrup over the bananas and flavor with the vanilla and the rum. 
    Let cool for about 5 minutes and serve as is or with your favorite ice 
    cream.
